The label sparkling describes a flavour direction. It does not mean carbonation, but a note reminiscent of soda or sherbet.
Putting together a sherbet profile
In the flavourings on this page, sparkling mostly appears next to sweet and fruity, often also next to cold or sour. Together this results in a sherbet profile of fruit, sweetness and acidity.
If you want to emphasise a particular fruit, add a matching single flavouring; a citrus note reinforces the acidity. Start from the dosage information of both flavourings and adjust the share step by step so that the soda note does not disappear behind the fruit.
