In your own blend, tart flavourings can act as a counterweight: they take some of the sweetness out of a sweet recipe and give it depth. Tobacco, tea or herbal notes are typical.
Tart in combination
- Spicy: the most frequent companion; together they produce a dark, dry profile.
- Fruity: fruit with a tart edge, for example dark berries or citrus peel.
- Creamy and sweet: balance the dryness and make the blend rounder.
- Minty: links the dry note with a herbal tone.
Tart notes can quickly dominate a blend. When combining, start with the manufacturer's dosage information and raise the tart share only step by step. For each tart flavouring, the product description says whether it is a concentrate or a longfill. Tart flavourings are available from Dinner Lady, Sique, SC and Aroma Syndikat, among others.
