The taste value sour stands for a clear, sharp acidity of the kind found in citrus fruit, green apples or unripe berries. Manufacturers mostly use it as a counterpart to sweetness, so the sweet-and-sour profile is the rule. Sour practically never stands alone.
After sweet and fruity come fresh and exotic, then sparkling, pointing towards sherbet. There is some overlap with the value citrusy, but sour is broader: berries or tropical fruit can be sour too. For the citrus side, combine sour with citrusy.
Bowls made of unglazed clay
Unglazed clay has an open-pored body that takes up liquid; when absorbed molasses later seeps out again, the trade calls it bleeding. Sour varieties are stocked from Darkside, Sebero, Aino, Al Fakher and Blackburn, among others.
