Many mixing flavourings carry the label sweet, and when you mix your own this can add up: if you combine two sweet flavourings, the blend becomes sweeter too. The second flavour label helps you plan for that.
Controlling sweetness
- Fruity and sweet: the most frequent combination; here the sweetness belongs to the fruit.
- Sweet and creamy: points to a dessert profile.
- Sweet with a counterweight: Sour, fresh or cold set acidity, brightness or a cooling effect against the sweetness.
If your blend should be less sweet, combine a sweet flavouring with a sour or tart one rather than with another sweet one. The manufacturers' dosage information remains the starting point. For sweet flavourings, the product description records whether each is a concentrate or a longfill. Sweet flavourings are available from SC, Dampflion, 5EL, Dr. Frost, Bad Candy and Dinner Lady, among others.
