Details

Elderberry is a small, almost black berry with a tart, fruity flavour reminiscent of juice or cordial. Unlike sweet blueberry, it brings an earthy depth, and depending on the variety the floral note of elderflower can come through as well.

  • Lime: by a wide margin the most frequent partner; the acidity of the lime brightens the dark berry.
  • Lemon and ginger: level with each other, setting a sour or a sharp direction.
  • Raspberry and strawberry: occasionally, for a red fruit side.

When the bowl is covered with perforated foil, the charcoal sits directly on the foil; the heat then cannot be regulated with a lid as it can on an HMD. Elderberry varieties come from brands including True Passion, Smoke Island, 187 Strassenbande, Savu and Nasch.
